Ingredients
1 cup flour
1 cup pecans or walnuts
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup pitted dates
1/4 cup coconut
1 stick butter
1 cup brown sugar
1 egg
1 teaspoon vanilla extract
Directions
Food Processor Method:
Set oven to 350 degrees. Prepare 8" or 9" square pan.
Put the flour, nuts, baking powder, salt, dates and coconut in the bowl of the food processor.
Pulse until nuts are finely ground.
Remove from bowl.
Put the butter, sugar, egg and vanilla into the bowl of the food processor and pulse until well mixed.
Add the flour/nut mixture back into the bowl and pulse to lightly combine.
Spread in a 8" or 9" square pan.
Bake at 350 degrees for 30 minutes, or until the center is done.
Without a Food Processor:
Finely chop the nuts.
Cream the butter and sugar.
Mix in egg and vanilla.
Add flour, baking powder, and salt, and barely combine.
Stir in the nuts, dates, and coconut.
Bake as above.
